Applicable to
- Maritime Silk Road · Flavors Awakening Three Cities
- Featuring selected local specialties from Quanzhou, Guangzhou, and Singapore, where Quanzhou's blend of mortal life and divine charm, Guangzhou's wok hei and slow-cooked soups, and Singapore's hawker centers and Peranakan heritage shops jointly compose a 21st-century culinary echo of the Maritime Silk Road.
- Quanzhou: The flavors of morning and night in the streets and alleys hide a city's mee sua, aged vinegar, medicinal liquor, and curry.
- Clear-broth Buddha Jumps Over the Wall: The pinnacle of Fujian cuisine, uniting treasures of the mountains and the sea in a single pot. Abalone, sea cucumber, shark fin, fish maw, tendon, and dried scallops, along with other delicacies, are simmered slowly for hours in Shaoxing wine and rich broth. A single urn encapsulates the abundance of Fujian's coastal bounty and the grand solemnity of hosting honored guests.
- Ginger Duck: A famous Quanzhou warm-tonifying delicacy. Three-year-old aged ginger (ginger mother) is sautéed until fragrant in sesame oil, then braised together with Muscovy duck, allowing the ginger aroma to penetrate the meat and bones. It comes from the Southern Fujian dietary tradition of "strengthening the body at the beginning of winter," and is also the ancient wisdom of dock workers to ward off the cold and dispel dampness.
- Guangzhou: The wellness romance of the people of Guangzhou is hidden in a pot of slow-simmered Cantonese soup. Selecting seasonal ingredients, paired with dried goods that serve as both medicine and food, they are simmered slowly in a clay pot for hours over a low flame. Without pursuing strong seasonings, it quietly extracts the original flavors of the ingredients, resulting in a clear yet rich soup. Brewed in accordance with the seasons—dispelling dampness in spring and moistening dryness in autumn—a single bowl entering the stomach brings warmth and comfort. This is the earthly hustle and bustle flowing through Lingnan daily life, as well as the culinary wisdom passed down from generation to generation. This issue's special features: Watercress, dried tangerine peel, and south-north apricot kernel soup with preserved duck gizzard, and sea coconut with five-fingered peach and aged chicken soup.
- Jueduebao (Claypot sizzle): In Cantonese, "juedue" imitates the sizzling sound of ingredients boiling in a high-temperature claypot. A cast-iron pot is heated to extreme heat with a fierce fire, and swamp eel, ribs, or chicken pieces are added. Wine is drizzled over, the lid is closed, and it is served. The moment the lid is lifted, the "wok hei" (breath of the wok) and the aroma of the wine fly together. This is Guangzhou's street-food stalls' ultimate expression of heat control and wok hei.
- Cured meat claypot rice: Rice is cooked in a claypot over an open fire, topped with Chinese cured sausages, liver sausages, and cured pork. As the rice cooks, the rendered fat seeps into the grains, forming a layer of golden, crispy crust at the bottom of the pot. When the autumn breeze begins to blow, it is time to eat cured meats—this is the seasonal calendar written by the people of Guangzhou with charcoal fire and claypots.
- Star Island (Singapore): Located at the bottleneck of the Straits of Malacca, Singapore rose as an entrepôt after the 19th century. Immigrants from China's southeastern coast converged with Malay, Indian, and Eurasian communities, giving birth to the Peranakan (Baba-Nyonya) culture and a unique hawker food ecosystem.
- Beef Rendang: A masterpiece of Nyonya slow-cooking. Beef is simmered with rempah (ground spice paste of shallots, ginger, chili, lemongrass, turmeric, etc.) and coconut milk over low heat until reduced, coating the meat chunks with the sauce. It blends the patience of Chinese slow-cooking with the language of Malay spices.
- Chilli Crab: One of Singapore's national dishes. Mud crabs are quick-fried with tomatoes, chili sauce, garlic, and beaten eggs, resulting in a sweet, sour, and mildly spicy sauce. Originating from Singapore's seaside hawkers in the 1950s, it is a hearty and appetizing dish created by immigrant hawkers for dockworkers.
- Laksa & Bak Kut Teh: Laksa is a Nonya coconut milk curry noodle, simmering a rich broth with rempah and shrimp paste; Bak Kut Teh is a peppery pork bone soup brought by Fujian immigrants, originally meant to warm and invigorate dock coolies. Both tell the history of physical labor and cultural fusion in Singapore's port city.
- Barbecue Freedom: All-you-can-eat grilled oysters and dozens of kinds of skewers
- Full coverage of global signature dishes
- Chilled Seafood: oysters, giant freshwater prawns, green-lipped mussels, abalone, crab legs + full category of Japanese sashimi and sushi; Live Grilling Station: Angus steak, beef short ribs, Wagyu beef, New Zealand lamb chops, pan-seared foie gras; Live Noodle Station served with handmade Wagyu wontons and dumplings
- Local specialty desserts: Four-fruit soup, Minnan triangle cake, Singapore durian tart, etc.
