First, the Emperor and Empress of the Tang Dynasty ride into the city in a carriage, greeted by singing and dancing from vassal states of the Western Regions. It is very grand. The buns are crispy on the outside and tender on the inside, with a crunchy crust coated in lamb fat. The meat in the filling is tender, fragrant, and has a perfect ratio of fat to lean meat. There is even a special bun-removal ceremony here when they come out of the oven. Afterward, we headed to the Yurungkash River to look for jade.
